Ingrediets:

  • 1-3/4 ounces cleaned bird's nest (see note below)
  • 2 cups water
  • 2 slices fresh ginger, each the size of a 25-cent piece
  • 4 cups Chinese chicken Soup Stock (see recipe below)
  • 2 tablespoons cornstarch mixed with 2 tablespoons water salt
  • 2 eggs, beaten ham, cut julienne, very fine, for garnish

 

Directions:

Soak the bird's nest overnight in fresh water. Using a fine mesh strainer drain and rinse the nest. Place in a saucepan and add 2 cups of water and the ginger slices. Simmer for 5 minutes and drain in the strainer, discarding the ginger. Pick out any impurities and add to the soup stock and simmer for 1/2 hour.

Stir in the cornstarch mixed with water and cook to thicken. Add salt to taste and pour the beaten eggs in a thin stream over the top of the soup. Count to ten and gently stir the eggs into the soup. The shredded-ham garnish will go nicely on the top of this very delicately flavored soup.

A good Chinese market should have nests available (or perhaps they will order for you), but they are very expensive. The cost for enough nest to make two batches of this soup will be somewhere between $30 and $40.

Serves: 6

Ingredients:

  • 3 1/2 oz. bird's nest (dried)
  • 6 cups chicken stock
  • 1 large chicken breast (deboned)
  • 1 Tbls. Dry sherry
  • 1/4 cup rich chicken stock
  • 2 Egg whites
  • 1 tsp. Salt
  • 2 Green onions (minced)
  • 1 Tbls. Ham (Smithfield, minced )
  • 2 Tbls. Cornstarch
  • 2 Tbls. Chicken stock

 

Directions:

  • In a large bowl, soak bird's nest water overnight in cold. Drain and rinse. Then spread softened nest pieces on plate; Remove any prominent pieces of 'foreign' matter (e.g. feathers, twigs).
  • Remove membrane and muscle fiber from chicken breast. Using a cleaver handle, pound meat to break down tissue and mince chicken until it is pulp. In a mixing bowl, mix cornstarch with 2 Tbls. chicken stock to make a medium thick paste. Set aside.
  • When ready to cook, heat 6 cups of chicken stock on high heat until boil. Immediately add bird's nest and simmer for 30 minutes. Slowly dribble dry sherry into minced chicken. Using a fork, lightly beat egg whites and fold gently into chicken so they are not completely blended.
  • Bring soup back to boil and slowly add chicken stock mixture to soup. Add salt to soup and heat on medium heat. When soup returns to boil, serve in serving bowls. Garnish with green onions.

Ingredients:

  • One or two Bird's nests, , and two pieces of Slice Ginger
  • half skinless chicken
  • 3.78 gram of dried Longan

 

Directions:

  • After soaking and cleaning of the bird's nests
  • Place them into the steaming pot with skinless chicken and suitable amount of water
  • Stewing separately with water for about 2 to 3 hour
  • Add in seasoning, ready for serve
